Baked Pancakes

I like to cook my family breakfast!  It not only gives them a great start to their day … but it’s my favorite meal as well.  I could eat breakfast 3 meals a day and be happy 🙂  Winter is an especially great time for pancakes, french toast, fresh pork sausage …. mmm!

This morning breakfast was baked pancakes.  They are delicious, and since they bake for 20-25 minutes unattended … that gives you a few “stolen” moments to do other morning chores. 🙂

BEAT: (till blended nicely, but don’t over beat)

12 eggs  (A great way to use up excess eggs! 🙂 )


2 1/4 cups milk

2 tsp vanilla

ADD; all at once, then Beat (a hand-held mixer works best)  Beat till well mixed, but do not over beat.)

2 1/4 cups flour

1 tsp salt

While oven is pre-heating, put 2 Tablespoons of butter in your 2 pans (mine are 10.5 x 14.5 x 2), pop pans in oven just long enough to melt butter.  Don’t forget it! I often set the timer for 1 minute so I don’t scorch the butter 🙂  Once butter has melted, tip pan side to side to spread butter over base of entire pan.

Pour batter into both pans.  It will be pretty thin.2016 COOKING 002

Bake @ 400* for 20-25 minutes … till “poofed” and golden at edges. 🙂2016 COOKING 003

Top with maple syrup … sauteed apples … spiced applesauce … blueberry sauce & whipped cream … the possibilities are endless 🙂 😀 2016 COOKING 005
