Pork Tenderloin Stir-Fry

So last night I used up the last of the pork tenderloin.  Yes, even the farmer sometimes runs out of meat!  Well, at least certain cuts 🙂  It was a tasty dish though so I thought I would share.  Easy and quick also, which is something important for us busy moms & dads (whomever is in the kitchen ;))

Pork Tenderloin Stir-Fry

I cut up one onion and started sauteing it in a bit of olive oil.  While that was started I sliced some of our all-natural  tenderloin into thin strips … and added it to the onion … When the meat was only a bit pink in places I pushed the meat and onions to the sides of my pan, added a quart bag of frozen (mostly thawed by this point) brocolli (from our garden ~ yum!) …. and drizzled everything with soy sauce.  Once the brocolli was cooked (I like it with firmness but not alot of crunch) … I whisked together 1/4 cup cold water and 3 Tablespoons cornstarch… and poured it into the meat & veggie mix … thickened it right up!

I served this stir fry with rice, but it goes nicely with egg noodles as well.
