Sweet ‘n Sour Meatballs

This recipe is one of my kid’s favorite ways to enjoy our farm-fresh, home grown ground meats! 🙂  I like it as a quick easy meal …. especially on those days I forget to take meat out of the freezer to thaw quick enough. 😉

  • 3# ground meat (I like to mix sweet Italian sausage & beef, about half & half, but I think about any ground meat will work in this recipe)
  • 1 cup bread crumbs (I use my coffee grinder & chop whatever bread is on hand to make crumbs.)
  • 3 eggs
  • sprinkle of salt
  • sprinkle of pepper

** Shape into 1-inch balls, place on baking sheet, bake at 400* for 15 minutes (or till no pink in center of meatballs)

** While the meatballs are baking … mix up the sweet ‘n sour sauce 🙂

SAUCE / COMBINE (in a pot):

  • 1 1/2 cups ketchup
  • 20 oz. can pineapple tidbits (WITH juice!)
  • 3 Tablespoons cornstarch
  • 1/3 – 1/2 cup brown sugar (depends how much “sweet” you want)
  • 2-3 Tablespoons apple cider vinegar (depends how much “sour” you want) 🙂
  • 2 Tablespoons soy sauce
  • sprinkle of ginger (add a bit more if you like more “pizzazz” 🙂 )

** Stir all ingredients together; bring to a simmer and stir often on a medium-low heat.  Simmer till meatballs are done … add meatballs to sauce .. serve by themselves or with pasta.  My favorite is egg noodles 🙂

Meatballs are all baked! MMM!
