Garlic Scape Pesto

This was my first year growing garlic … so I learned that you have to snip the scapes off once they curl … and that you didn’t have to just throw away those scapes ~ you could make garlic scape pesto from them!

I snipped off the white “bulb” part … then …

Measure 1 pounds of scapes.  Puree in a food processor till nice and smooth.

Here I had them almost but not quite smooth enough….

Then add 1 cup of grated Parmesan cheese and 1 cup of olive oil and continue to blend.  (I drizzled in the olive oil a bit at a time.)

A nice quart full of garlic scape pesto!

It was recommended to use in small amounts as quite strong so I plan to freeze in ice cube containers till solid … then pop out into a freezer bag for storage till use. 🙂
