Pear Custard Bars

My kiddos consume apples like they are going out of style … and although they enjoy pears it seems we always get a couple leftover that get super ripe.  This recipe is perfect for using them up!

CRUST:

Cream: 

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 1/2 tsp vanilla

Add:

  • 3/4 cup flour
  • 2/3 cup nuts, chopped fairly fine (walnuts, almonds, choose your favorite)

** Press into a greased 8 x 8 pan.

** BAKE at 350* for 20 minutes or till lightly browned.  Cool for a bit while increasing heat to 375*.

TOPPING:

Cream:

  • 8 oz cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/2 tsp. vanilla

** Pour over crust.

** Take 2 very ripe pears, peeled and sliced very thin, and layer them over the cream cheese filling.

** Sprinkle lightly with sugar and cinnamon.

** BAKE at 375* for 30 minutes.

** Cool on a wire rack for about 45 minutes.

** Cover and refrigerate for at least 2 hours before cutting.

** Store in the refrigerator.
