This delicious cake is easy to whip up … and so gorgeous when completed!
BEAT (till smooth):
- 8 oz. cream cheese
- 1 cup butter
- 1.5 cups sugar
- 1.5 tsp. vanilla
ADD (one at a time):
- 4 eggs
COMBINE (then add to creamed mixture):
- 2 1/4 cups flour
- 1.5 tsp. baking powder
- 1/2 tsp. salt
- 2 cups cranberries, fresh or frozen
- 1/2 cup pecans or walnuts, chopped
Batter will be nice and thick! Spoon into a greased 10″ bundt pan.
Bake at 350* for 1 hour and 5 minutes – 1 hour and 10 minutes.
Let stand 5 minutes before removing from pan. Cool on wire rack.
